Chicken Quiche in a Lemon Pastry Shell

“I love a good quiche. I had a great one this last Christmas when we visited Amanda’s family in Cape Breton. It was some sort of seafood quiche. I will have to try to get the recipe next time we are visiting. This chicken quiche is a pretty tasty recipe so give it try and let us know what you think.”

Chicken Quiche

INGREDIENTS:

2 chicken breasts, cut into 1 inch cubes
1/4 cup butter
1 onion
1 large tomato, peeled and cubed
3 eggs
1 1/2 Cup half and half
5oz cream cheese cubed
pinch of nutmeg
Lemon Pastry
1 1/2 cup flour
9 Tbs butter
1/4 cup ice water
grated rind and juice of 1/2 lemon.
1 tsp butter cut in small pieces

DIRECTIONS:

Heat butter and saute chicken slowly for 5 to 6 minutes. Remove chicken. Add onion and cook until tender. Add tomatoes, cover and cook 7 minutes, until moisture evaporates. Beat eggs. Add cream cheese and nutmeg. Arrange onion, chicken and tomatoes, on bottom of pastry shell. Pour over egg mixture and dot with butter. Bake at 375 degrees for 35-40 minutes. Knife should come out clean when done.

To make the lemon pastry cut butter into flour mixture until crumbly. Add lemon rind, juice and water. Mix lightly. Roll in 9 inch pie plate. Bake 425 degrees for 10 minutes.
