Oatmeal Cookies Recipe

“Amanda is a big fan of oatmeal cookies. I also recall how much my grandpa loved raisins in his oatmeal cookies. For that matter, he loved raisins in most anything. I can’t say I am a huge raisin fan but hey, if you are, feel free to put as many raisins as you like in your cookies. ”

3 squares butter or margarine (See below for healthier version)
2 1/4 cups brown sugar
3 eggs
3 Tbs cold water
1 1/2 tsp vanilla
3 1/2 cups flour
1 1/2 tsp soda
1 tsp salt
4 1/2 cups oatmeal


In your Bosch mixer, cream the butter, brown sugar and eggs. Add the cold water and vanilla. Then add all the other ingredients. Ball the dough into the one inch balls. You may add raisins or chocolate chips. Place balls of dough on a cookie sheet. Bake at 350 for 6-8 minutes.

For a healthier version use 3/4 cup margarine, 3/4 cup applesauce, 3 cups whole wheat flour and 1 cup white flour. You can also use three egg whites and only one full egg.
