Rhubarb Pie Recipe

“Rhubarb pie is one of my favorite kinds of pies. I love it. Up in Oakley we have a rhubarb plant in our garden that goes crazy every year. My mouth is watering just thinking about it. We hope you like it.”

Rhubarb pie

INGREDIENTS:

2 lard pie crusts
1 cup sugar
3/4 cup brown sugar
1/3 cup plus 1-2 Tbs flour
1/2 tsp orange peel
Red food coloring
6 cups cut up rhubarb

DIRECTIONS:

Mix together first 5 ingredients. Precook rhubarb in the microwave for 5 minutes. Carefully add it to the mixture. Put fruit mixture on top of lard crust in a 9 inch pie dish. Dot top with butter. Cover with top pastry. Brush with milk. Liberally sprinkle with sugar. Put several slits in the top pie crust. Bake 40-45 minutes at 425 degrees
