Shrimp Scampi Recipe

shrimp scampi


1 1/2 lbs linguine
1 Tbs kosher salt
3/4 stick unsalted butter
5 Tbs olive oil
9 cloves minced garlic
2 lbs frozen shrimp
1/2 tsp pepper
3/4 cup chopped fresh parsley
grated zest of 1 lemon
juice from 4 lemons
1/2 lemon thinly sliced in 1/2 circles
1/4 tsp hot red pepper flakes


Drizzle some oil in a large pot of boiling water. Add 1 Tbs kosher salt and the linguine. Cook. Meanwhile, in a 12 inch heavy bottomed pan, melt the butter and olive oil. Add the garlic and saute for one minute. Add shrimp, 1 Tbs salt and the pepper, saute until the shrimp are pink (if you use fresh). Stir often. Remove from heat and add parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine. Serve with bread and a salad.

Hint: It’s also great to add some of these things: Parmesan cheese, mushrooms, asparagus, and pine nuts.
