Coconut Biscotti

INGREDIENTS:

1 1/2 cups flour
3/4 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1/8 tsp nutmeg
3/4 cups sugar
1 tsp vanilla
2 eggs
1 cup coconut
1/2 cup chocolate chips (optional)

DIRECTIONS:

Combine first five ingredients in a mixing bowl
. In your Bosch mixer place sugar, vanilla, eggs, and beat on medium for 2 minutes until thick. Add flour mixture and coconut. Stir to combine (dough will be sticky). Turn dough onto a heavily floured board and knead 7 or 8 times.
Shape dough into a 15×3 log. Place log on parchment covered cookie sheet and press to 1 inch thickness. Bake 40 minutes. Cool 5 minutes. Cut roll diagonally into 20 slices, stand upright on baking sheet. Bake 20 minutes (cookies will be slightly soft and harden later). Can put chocolate chips in or dip halve in melted chocolate.
