Rice Pudding Recipe

“This rice pudding recipe brings back wonderful memories of my grandfather. It was one of his favorite desserts and has long been one of mine. Sometimes food has a way of calling back memories long forgotten.”

Rice Pudding


1/2 cup rice
1/2 tsp salt
2 cups milk
2 beaten eggs
1/3 cup sugar
1 tsp vanilla
1/4 cup raisins
cinnamon or nutmeg sprinkled


In a pan boil 1 3/4 cup water. Add rice and salt. Turn down heat and cook rice. Then add milk and boil gently, stirring occasionally, until thicker.
Combine eggs, sugar and vanilla in bowl. Gradually stir into rice, mix well. Pour into greased 1 1/2 quart casserole dish. If desired stir in raisins. Bake uncovered at 350 degrees for 40 to 45 minutes or until knife comes out clean.
Put the casserole in a pie pan with 1 inch water to bake
